A new restaurant has emerged onto the Auburn dining scene. The Chicken Salad Chick, a chic carry-out restaurant, has recently developed into one of the most popular places for students to grab a quick bite to eat.

The Chicken Salad Chick has 12 different chicken salads to choose from, making itself a heaven for chicken salad lovers.

Its menu also includes sandwiches served on a variety of breads, soups, sides and desserts.

Not only does The Chicken Salad Chick boast about having the perfect chicken salad for every palate, but there is an intriguing story behind how this restaurant came to be.

Stacy Evans, the founder of The Chicken Salad Chick, began working on her chicken salad creations at home and soon started selling her salads to friends and neighbors.

Once business was booming and the prospects of a restaurant were growing, Evans received a call from the Lee County Health Department.

The Health Department informed Evans it was illegal to cook her chicken at her home and sell it. So, production was shut down and customers were outraged.

But Evans and her partner, Kevin Brown, were quick to recover. They transformed a small suite off Opelika Road into their very own chicken salad restaurant.

“This has been a truly collaborative effort,” Evans said. “We did it!”

The Chicken Salad Chick really does have a taste for everyone. From the Classic Carol, an original recipe, to the Buffalo Barclay for those craving wings, The Chicken Salad Chick doesn’t skimp on its creativity and deliciousness.

Kate Boston, a freshman in English and political science, is a fan of the take-out restaurant.

“I love The Chicken Salad Chick,” Boston said. “It is so easy to come in and order good food when I’m in a hurry or just want to go sit and eat in the park with friends.

“I tell everyone I know to eat here.”

The food is fresh and an alternative to the usual college meal, microwave dinners.

“I feel good after I’ve eaten at The Chicken Salad Chick,” said Emily Walters, a freshman in nutrition.

“The food is delicious and healthy. Plus, the restaurant is so cute!”

The Chicken Salad Chick is located at 555 Opelika Road, next to the storage center by Touchdowns Bar and Grill.

It is open Monday through Friday 10 a.m.-6 p.m. and Saturday 10 a.m.-2 p.m.
