Let's face it, meals in the middle of the week are hard to make. The last thing anyone wants to do after a full day of class, meetings and activities is cook. It can be hard to fight the temptation of fast food, especially with the opening of Chipotle. I had it for dinner not even a week ago, and I am ready for it again. Thankfully, none of my friends were craving it so I looked into my refrigerator to figure out my back-up meal.
In my first blog I mentioned rotisserie chicken as a great, fast meal. During my time at college I have learned to make just about anything with it. Chicken caesar wraps are a quick and excellent option, but if you're craving Mexican food, putting the chicken on a tortilla with shredded cheddar cheese will hopefully make your Chipotle-equivalent craving disappear.
The newest addition to my rotisserie list is barbecue chicken sandwiches. First, cut the chicken into pieces and put them into a bowl. Next, grab your favorite barbecue sauce and pour on top. Then stir the chicken and the sauce together, throw it on a bun and you have yourself a fast, fulfilling meal.
Tonight I had my chicken and cheese quesadilla, and even though I still want Chipotle, my body will thank me for it later.
