On March 29, 2025, Beignets and Brews officially opened its doors on N. College St. in downtown Auburn, adding a fresh and exciting option to Auburn's culinary scene, offering a new spot for students, locals, and visitors to enjoy a delicious combination of sweet treats and coffee.
The heart of Beignets and Brews are their signature beignets, which some customers have stated remind them of the best New Orleans beignets. These warm, freshly made pastries are served with a dusting of powdered sugar, and customers can enjoy a variety of dipping sauces including chocolate, blueberry and buttercream.
The beignets have quickly become a standout feature that customers have been loving. One of the most popular choices is the beignet bites which you can get in many different flavors, such as turtle, nutella and cinnamon swirl.
"We’ve had an amazing response from the community, and the cinnamon sugar beignet is by far my favorite especially when it's served with warm cream cheese icing." Rachel Hawk, owner of Beignets and Brews Auburn said.
The café also offers an array of specialty beverages, like the Biscoff cookie butter latte, the matcha lavender bliss, and the iced raspberry white mocha. A limited-time menu item is the seasonal blueberry cobbler sundae.
Another menu item that will be coming soon is mimosas that you can get by the pitcher, and according to Hawk, will be a perfect addition for friends and family to catch up and have brunch. Hawk also says customers are encouraged to check the menu each month for limited-time treats available for purchase.
“Beyond the delicious menu offerings, Beignets and Brews has become known for its welcoming atmosphere. It’s quickly becoming a go-to spot for students and locals, many of whom have found it to be the perfect place to study or catch up with friends. The vibe here is all about being a community space. It’s cozy, inviting, and we want everyone to feel at home," Hawk says. "The Auburn community has been so amazing. I’ve really felt embraced by everyone here, and it’s been a big part of the café’s success.”
According to Luci Carney, a customer who was studying while enjoying the cinnamon swirl beignets, the cafe is a "fun place to enjoy a sweet treat with your friends."
Beignets and Brews is also planning to participate in events downtown, such as Sip and Shop on Friday, April 4, as well as jewelry pop-ups where local vendors can showcase their creations while customers enjoy their favorite treats. Looking ahead, Beignets and Brews is preparing for a grand opening event on April 26, 2025.
